Liddells Frittata

Ingredients

6 eggs
¼ cup Liddells Lactose Free Full Cream Milk
1 leek, chopped
2 rashers bacon, chopped
½ cup Liddells lactose free shredded cheese
6 cherry tomatoes, diced  
A good handful of baby spinach, chopped
2 asparagus stalks, chopped
¼ cup cooked sweet potato, boiled or roasted, diced.
Salt & pepper

Directions

Grease frittata (we like to use a shallow dish) well. Preheat the oven to 170 degrees.

Whisk eggs & milk in a large mixing bowl, add all the remaining ingredients and mix gently to combine.

Pour into the frittata dish and bake for 45 min or until frittata is cooked through.

Remove from the oven and allow to cool slightly. Drizzle a little Extra Virgin Olive Oil & season with Salt & Pepper, serve with a green salad.
